Buddha Bowl with Tofu, Avocado, Zucchini and Edamame Recipe

This Buddha bowl is loaded with protein-rich tofu, creamy avocado, tender zucchini, and nutty edamame, among other things. Ideal for a quick and filling lunch or dinner.

Ingredients

Time Needed

  • Prep Time: 15 minutes
  • Cook Time: 25 minutes
  • Total Time: 40 minutes

Instructions

  • Preheat the oven to 400°F (200°C).
  • Combine the cubed tofu, olive oil, garlic powder, ground ginger, paprika, and salt in a mixing bowl.
  • Place the tofu cubes on a baking sheet and bake for 25 minutes, flipping halfway through.
  • Toss the sliced zucchini with 1 tablespoon olive oil and salt in a separate bowl.
  • Place the zucchini slices on a baking sheet and bake for 20 minutes, flipping halfway through.
  • In a steamer basket, steam the edamame for 3-4 minutes, or until heated through.
  • Divide the cooked quinoa among four bowls and top each with the baked tofu, sliced avocado, roasted zucchini, and steamed edamame.
