Instructions

  • To make the dressing, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, garlic, and ginger in a small bowl.
  • Combine the cubed tofu, sliced cucumber, chopped peanuts, and cilantro in a large mixing bowl.
  • Drizzle the peanut dressing over the tofu and cucumber mixture and gently toss to coat.
  • Allow the salad to chill for at least 30 minutes before serving to allow the flavors to meld.
