Pineapple Sweet and Sour Tofu with Sticky Rice Recipe

This Pineapple Sweet and Sour Tofu with Sticky Rice is a tasty and simple vegan dish. The crispy tofu is coated in a tangy and sweet sauce and served over sticky rice for a filling lunch or dinner dish.

  • Cook Time: 25 minutes

Instructions

  • Drain the sticky rice after rinsing it in cold water.
  • Combine the sticky rice and 2 cups of water in a pot.
  • Bring to a boil, then lower to a low heat and cover.
  • Cook for 20 minutes, or until all of the water has been absorbed and the rice has become sticky.
  • Mix the rice vinegar, soy sauce, brown sugar, cornstarch, garlic powder, and ginger powder in a small bowl until smooth.
  • Set aside the tofu, which has been cut into small cubes.
  • Heat the vegetable oil in a pan over medium-high heat.
  • Fry the tofu until it is crispy and browned on all sides.
  • Stir in the pineapple chunks and sauce to coat the tofu and pineapple.
  • Simmer for 2-3 minutes, or until the sauce thickens and the pineapple is thoroughly heated.
  • Serve the sticky rice with the sweet and sour tofu.
