Tofu with Cabbage and Peppers Recipe

This quick and easy tofu stir-fry with cabbage and peppers is ideal for a busy weeknight. The tofu adds protein, and the vegetables add color and nutrition.

Instructions

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Cook for 3-4 minutes, or until the tofu is lightly browned, in the skillet.
  • Cook for another 2-3 minutes after adding the sliced bell peppers to the skillet.
  • Cook for 3-4 minutes, or until the cabbage is tender, in the skillet.
  • Whisk together the soy sauce, rice vinegar, cornstarch, garlic powder, and 1/4 cup water in a small bowl.
  • Stir the sauce into the tofu and vegetables to combine.
  • Cook for another 2-3 minutes, or until the sauce thickens.
  • Season to taste with salt and pepper.
  • Serve immediately and enjoy.
