Stir Fried Tofu, Potato, Eggplant and Pepper (Disanxian) Recipe

This is a traditional Chinese stir-fry with tofu, potato, eggplant, and bell pepper. It's a delicious vegetarian dish with lots of flavor and texture. Instructions

  • Stir-fry the potato for 3-4 minutes, or until slightly softened.
  • Stir in the eggplant and bell pepper for 3-4 minutes, or until all of the vegetables are tender.
  • Stir in the garlic and ginger for 1-2 minutes, or until fragrant.
  • Stir-fry the green onions and soy sauce mixture in the wok for 1-2 minutes, or until the sauce thickens and coats the vegetables.
  • Serve immediately with rice or noodles.
