- In a wok or large frying pan, heat 1 tablespoon vegetable oil over high heat.
- Fry the tofu for 5 minutes, or until golden brown and crispy.
- Place aside.
- Whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic in a small bowl.
- In the same wok or frying pan, heat the remaining tablespoon of vegetable oil.
- Stir-fry the corn kernels for 2-3 minutes.
- Stir in the chopped spring onions for another minute.
- Stir in the cooked rice for another minute.
- Return the tofu to the wok or frying pan.
- Stir-fry the tofu and vegetables for another minute with the sauce.
- Serve immediately.
