Fried Tofu and Rice with Broccoli, Red Onions and Peppers Recipe

- Cook the rice in a pot with the water, then cover and reduce the heat to low.
- Allow it to simmer for 18-20 minutes, or until completely cooked.
- Heat the vegetable oil in a pan over medium-high heat while the rice cooks.
- Cut the tofu into bite-sized pieces and combine it with the cornstarch, salt, and black pepper in a mixing bowl.
- Cook until golden brown and crispy, flipping occasionally, in the hot pan with the tofu.
- This should take approximately 8-10 minutes.
- When finished, transfer the tofu to a plate lined with paper towels to absorb any excess oil.
- Cook until the broccoli, red onion, and red bell pepper are tender but still crisp in the same pan.
- This should only take 5-7 minutes.
- In a mixing bowl, combine the soy sauce, honey, rice vinegar, red pepper flakes, sesame oil, and minced garlic while the vegetables cook.
- When the vegetables are done, return the tofu to the pan and drizzle with the sauce.
- Stir until the tofu and vegetables are completely coated in the sauce.
- Arrange the tofu and vegetables on top of the cooked rice.
