Fried Tofu and Rice with Broccoli, Red Onions and Peppers Recipe

  • Prep Time: 15 minutes
  • Cook Time: 25 minutes
  • Total Time: 40 minutes

Instructions

  • Cook the rice in a pot with the water, then cover and reduce the heat to low.
  • Allow it to simmer for 18-20 minutes, or until completely cooked.
  • Heat the vegetable oil in a pan over medium-high heat while the rice cooks.
  • Cut the tofu into bite-sized pieces and combine it with the cornstarch, salt, and black pepper in a mixing bowl.
  • Cook until golden brown and crispy, flipping occasionally, in the hot pan with the tofu.
  • This should take approximately 8-10 minutes.
  • When finished, transfer the tofu to a plate lined with paper towels to absorb any excess oil.
  • Cook until the broccoli, red onion, and red bell pepper are tender but still crisp in the same pan.
  • This should only take 5-7 minutes.
  • In a mixing bowl, combine the soy sauce, honey, rice vinegar, red pepper flakes, sesame oil, and minced garlic while the vegetables cook.
  • When the vegetables are done, return the tofu to the pan and drizzle with the sauce.
  • Stir until the tofu and vegetables are completely coated in the sauce.
  • Arrange the tofu and vegetables on top of the cooked rice.
