Tofu Soup with Mushrooms, Peppers and Sesame Seeds Recipe
On a chilly day, this tofu soup is a delicious and healthy way to warm up. The addition of mushrooms, peppers, and sesame seeds to the soup adds depth of flavor and texture, while the tofu provides a good source of plant-based protein.

Instructions
- Heat the sesame oil in a large pot or Dutch oven over medium heat.
- Sauté the garlic, red bell pepper, and mushrooms for 5 minutes.
- Pour in the vegetable broth, soy sauce, and rice vinegar.
- Whisk together the cornstarch, ground ginger, salt, and black pepper in a small bowl with 1/4 cup of water.
- Pour in the cornstarch mixture and stir to combine.
- Simmer the soup for 10 minutes, or until the vegetables are tender and the soup has thickened slightly.
- Toast the sesame seeds in a dry skillet over medium heat until lightly golden, stirring frequently.
- Cook for 5 minutes after adding the cubed tofu to the soup.
- Serve the soup immediately, garnished with toasted sesame seeds.
