Tofu Soup with Mushrooms, Peppers and Sesame Seeds Recipe

On a chilly day, this tofu soup is a delicious and healthy way to warm up. The addition of mushrooms, peppers, and sesame seeds to the soup adds depth of flavor and texture, while the tofu provides a good source of plant-based protein.

  • Cook Time: 20 minutes
  • Total Time: 35 minutes

Instructions

  • Heat the sesame oil in a large pot or Dutch oven over medium heat.
  • Sauté the garlic, red bell pepper, and mushrooms for 5 minutes.
  • Pour in the vegetable broth, soy sauce, and rice vinegar.
  • Whisk together the cornstarch, ground ginger, salt, and black pepper in a small bowl with 1/4 cup of water.
  • Pour in the cornstarch mixture and stir to combine.
  • Simmer the soup for 10 minutes, or until the vegetables are tender and the soup has thickened slightly.
  • Toast the sesame seeds in a dry skillet over medium heat until lightly golden, stirring frequently.
  • Cook for 5 minutes after adding the cubed tofu to the soup.
  • Serve the soup immediately, garnished with toasted sesame seeds.
