Tofu Stir Fry Noodles Recipe

This vegan and gluten-free stir-fry noodle dish is quick, simple, and flavorful. It's ideal for a filling weeknight dinner or meal prep lunch.

Ingredients

  • Prep Time: 15 minutes
  • Cook Time: 15 minutes
  • Total Time: 30 minutes

Instructions

  • Soak the noodles in hot water for 10 minutes before draining.
  • In a wok or large pan, heat 1 tablespoon vegetable oil over high heat.
  • Stir-fry the tofu for 3-4 minutes, or until golden brown.
  • Set aside after removing from the pan.
  • Stir in the remaining vegetable oil, followed by the garlic and ginger for 30 seconds.
  • Stir in the sliced red bell pepper and julienned carrot for 3-4 minutes, or until slightly softened.
  • Stir in the soy sauce and hoisin sauce to combine with the vegetables.
  • To make a slurry, combine the cornstarch and water in a small bowl.
  • To thicken the sauce, add the slurry to the pan and stir.
  • Stir in the drained noodles to coat with the sauce.
  • Return the tofu to the pan and continue to stir-fry for 1 minute to heat through.
  • Serve immediately and enjoy.
